I saw your answer regarding double stretchers earlier, but is there a single stretcher that would fit in this tent? Thanks

We've not tried it out in person, but the best chance would be the Coleman Swagger 1P Stretcher based on dimensions.
Worth noting that this could only be used with one person if you went this direction. It wouldn't be comfortable trying to get 2 people onto it.

Is this sand fly proof? What sort of mesh is it?

There no such thing as Sandfly or Midge proof shelters, as they can get inbetween zipper teeth and fly in when you're opening the doors, etc - BUT the No-See-Um mesh that's used in this tent is the best chance you've got of reducing the amount of sandfies you have to deal with.
Double that with some bug spray and you should be ok!
Is there a stretcher that would be compatible for me to set this tent up on?

It's not ideal to use this with a stretcher, but the closest option you'd have is the Oztrail Queen Easy Fold Stretcher.
Be mindful that there is a central bar down the middle to keep stretcher integrity.
You could look at the Darche XL 1440 Stretcher which doesn't have a central bar, but it will be quite saggy.
Would this tent (frame) be strong enough to cover with a good quality lightweight tarp?

You shouldn't have any issues covering this with a lightweight tarp - you'd just need to be mindful of how the tarp is anchored/tensioned.
The tent itself has some movement, so will reduce in height/squash down slightly if the tarp is tensioned with alot of pressure.
