Yep, you can use this sleeping bag with any mattress combination - we usually recommend using a sheet on your mattress though for longevity and ease of cleaning.
Please be aware that self inflating mats are NOT suitable to use in folding roof top tents, you will cause damage to your mat and warranty will be void.
Self-inflating mats may be suitable to be used in a non-folding hardshell roof top tent, but you'd need to double check depending on the model.

Due to the zip configurations, this can also be converted to two quilts, or two narrow sleeping bags if required.

Yes, absolutely. I'd recommend the Stratus Fleece Liner. You can either use two singles or open them up and join them together to make a large double liner.

You can choose to fully unzip this sleeping bag and pack it as 2 x blankets if you want, but you would need to purchase something to store them in separately.

You'll have no issues using them together.
Hi, in the double configuration can the zips be opened on both sides so each partner can get in and out easily or manage temperature control?

Yep, they sure can. The Mudge is opened up like a blanket with two sleeping bags joined like a sandwich.
As a result, there will be a zip slider on both sides of the 'bag'.
Do the zips unzip real easy ( like during the night when sleeping) or would they hold up? The current bags we have unzip whenever we roll over etc during the night

Coleman have a red guard on all their zippers, which they call a "ZipPlow".
Generally this makes for snag-free opening and closing, but it also acts as a stopper to prevent the zip from sliding open without intention, so your bag will stay closed and warm all night!
Don't laugh, but I am looking for a wide snuggly, not too expensive sleeping bag for my whippet, who really feels the cold. Does this feel soft and snuggly. He likes things that feel fleecy. Given no one currently manufactures dog sleeping bags, a human one seems the next best thing to adapt for his needs. It needs to be pretty warm, but I don't want to spend a lot and also being able to wash it is pretty vital too. Whippets are usually pretty happy to bury themselves into and crawl into sleeping set ups. Is there an extra wide double seeping bag that could accomodate me and him together for super cold nights? He is used to sleeping at my side, but not in bed with me, though one night when it was really cold I had to pop him right in beside me as he was really freezing.

Fellow whippet owner here, so I hear you, they do feel the cold don't they. The Mudgee C5 double should suit both of you, however they don't have a fleece liner, so that may or may not be a deal-breaker. They are machine washable though, which is handy post trip. Another good option to consider is the Pilbara C0 sleeping bag, you could get one each maybe? I tend to just bundle mine up in their jackets, and take their fleece beds and if they're too cold they'll find a way to snuggle under the end of the sleeping bag.

The Coleman Mudgee C5 Double Sleeping bag is a great option for a summer-weight bag/s. There's no problem with your kids using these and as the child-specific bags are aimed for toddlers/younger children, the Mudge C5 would be a batter long term investment.

This would be a great bag, yep! You can select a temperature comfort range in the left-hand menu when looking at sleeping bags, that will give you an idea of what other options there are. Having said that though, I think this is one of the better options. Given its square shape, it allows you to open it up to a lovely blanket if needed, also with that brushed fabric on the bag itself, its alot nice against the body in warmer weather that some of the shiney fabric.
