How long is it supposed to take to inflate? It’s been about 10 minutes and it doesn’t look like it did in store…

The mattresses in store have been fully inflated and on display for atleast a year.
Your mattress is brand new out of the box, and comes mechanically compressed from the factory.
The first inflate may take a day or two, and is best done somewhere warm, but out of direct sunlight.
Whilst its 100% useable after that, it will also take a few uses/trips for the mattress to fully stretch out and relax, and reach its most optimal state.
This is the case for all new self inflating mats, regardless of brand or size.

Which would you most recommend between this and the Zempire Bomberpad?

Both of these mats are great options, and are very similar in terms of size and features. The Zempire Bomberpad is slightly thicker, and therefore packs away a little larger, and is heavier. The BlackWolf 2D Deluxe Single packs away a little smaller, and is slightly lighter, due to a 1cm thickness difference. The BlackWolf mat comes with a verified ASTM R-value, and a limited lifetime warranty, so is a slightly better option than the Zempire, which carries an estimated R-value, and a two year warranty.
Hi. I would like to use his mattress in a hard floor camper trailer on a trip to Darwin during winter. Will it be warm enough when temperatures drop to 0? Thanks. Jaco

It's not the mattress that will keep you warm persay, but your sleeping bag.
The mattress just provides an insulative layer to stop your own body heat from transferring through the cold ground.
Any mattress with an R-Value of 4 will allow you sleeping bag to perform as advertised.
This mattress has an R-value of 6.1, so as long as your sleeping bag or bedding is warm enough, this mattress will absolutely protect you from heat loss.
If you Velcro two of these together would they be suitable on top of the oztrail easy fold Queen stretcher bed?

You shouldn't have any trouble using the Black Wolf 2D Deluxe Single mattresses with the Oztrail Easy Fold Queen Stretcher Bed.
As there is a thick bar in the middle of the stretcher, you'll likely find it easier to not attach the mattresses together. They will fit nicely on either side.
Will this and the Super Deluxe fit into the Jet Bunker?

The Jet Tent Bunker is now a discontinued line, so we're not able to physically try this for you, however, I've found in the archive that the sleeping area of the bunker is 190L x 80Wcm. Unfortunately both the 2D Deluxe, and Super Deluxe are both too long to it into the Jet Tent Bunker.
