I've drank water from these before, but Ben hasn't. I personally don't recall there being a flavour or taste to the water, and going from the product reviews it doesn't seem like anyone else has had issues.
The funny water taste thing appears to be a personal thing that some people can taste and some people cant. If you do have issues, a bit of bi-carb and lemon, or raspberry cordial will see you right.
You can store them laying flat, or on the side edge, but I'd just be mindful of making sure they're secure.
Absolutely ignorant question: once the lower tap has been fitted, can it later be removed and bung replaced? Or once it's in, you can't return to original watertight pre-tap state.

Not ignorant at all! The tap is removable, it will have a thread on it the same as the bung plug.
You can interchange them as necessary, which is common practice when storing jerry cans for a while.
Its helps to keep the tap from damage - hope that helps!

Currently, all of our water jerry cans have a bung plug in the bottom. Sorry, you've previously had trouble with leaking bungs, we've found these ones to be pretty good.

ProvQuips standard water jerry cans have a narrower neck on them for easier pouring. The wide mouth designation is how Pro Quip have labelled them, but in comparison to some other Jerry Cans, the mouth is a fairly standard size.
