Where can you get a hex shaped floor for the Oztent hex?

You can't get one sorry - Oztent doesn't make a hex floor mesh. They only make a floor mesh for the square screen house.
The 12ft² or 3.65m² Ultramesh Tarp will cover the sfloor space for you, it is square though so you will have some overhang outside of the screen house. You can either fold it under, or take it to a canvas/awning specialist and have it cut & edged to size.

Correct, you can only add 5 walls to the Screen House Hex. The door panel isn't able to have a wall attached to it.
Hi We are a family of 5 (2 adults, 3 kids 10-14) and we thinking about buying the rx5 and hex screen house combo. Do you think the rx5 would be big enough to accommodate us assuming we have cooking and tables/chairs etc in hex house? Should we consider getting the sv5 max instead? Does the hex house have a weather/rain proof roof ? Does the hex house have a floor that can be purchased as accessory?

If you were to use the RX-5 for just sleeping, then it would be big enough for your family. The Hex house would then provide plenty of additional space for living/cooking and eating. Oztent has indicated the roof is waterproof and seam-sealed to prevent water from getting in and when combined with the walls you should have a great setup. They do however only recommended this for use in light/mild rain, so just keep these conditions in mind when your out camping. They don't provide a custom floor, however a Mesh Tarp will work well.
A reviewer said there are two walls in each pack but cannot find that in the description.

These used to come as a twin pack but Oztent has decided to supply them as single units now. It gives you a bit more flexibility to grab as many or as few as you'd like.
Just wondering if the hex would still fold down with 5 walls attached?

While it is possible to keep the walls attached to the Oztent Screen House, we wouldn't recommend it. There is a fair bit of difficulty in then being able to pack it down correctly and risk in that you may damage the walls or the screen house itself.
Furthermore, Oztent advises to not leave the walls attached so any damage that does occur wouldn't be covered by warranty.
Just bought one from snowys November 2018 and it has the silver lining? I bought this because of the original answer and I did not want the silver lining! lol
