Can you have the ladder so you can do side access? And do the screens just unzip at the bottom so u can climb in rather than have to open them all the way around

There are ladder latches on both sides for you to have side access, the mesh screens do unzip but as un upside down D.
You'll have to unzip most of the mesh to climb in, just be mindful of the gas struts that cross some of the window area.
G'day, Do you know how much weight the top rails can take? I have a kayak that I would like to mount on top. Obviously it would be removed before opening the tent, I'm just concerned to know wether those inbuilt rails can take the added weight of around 23kg. The dynamic load rating of my canopy is 150kg, so the total weight should be fine. Thank you

The roof load rating on the Saber X is 25Kg, but that is for permanent mounts like solar panels where the RTT still needs to be opened, so you shouldn't have any issues at all with the Kayak.

What is the best way to mount this rooftop on a tall 4x4 given most car manufacturer rooftop rating static and then fa less for dynamic weight limits? Does it come with/need a full roll bar?

These can be mounted to any standard roof rack rails or platform system, but whether or not it's right for you depends on your vehicle.
When you take into consideration the whole camp setup, most people with this RTT are probably well in excess of their dynamic roof load rating.
If you're not 100% sure on what your particular vehicle specs are, or you're not sure if your current roof cargo system is suitable, it's probably best to run past a roof rack systems specialist for the best advice.
Can you pack your sleeping bag up in when closed?

The Saber X that we have on display can be closed with the Darche 1400 Cold Mountain sleeping bag inside.
I'd say generally it shouldn't be an issue, as long as you don't have super chunky bedding!
Can you purchase an inner sprung mattress for this?

You potentially can from 23Zero directly - I know the Original Saber had the option of a standard or inner sprung mattress, so 23Zero may likely have it as an aftermarket upgrade.
