Does this need to be anchored down to three roof racks or would two racks on the side be enough to support it?

This awning only comes with 2 brackets, which is all that's required to install it. Just bare in mind you can't really have more than 60cm of unsecured length on each end of the awning, due to vibration and flexing - so you'll need to have a distance of 135cm or more between your racks.
When you say left hand side does that mean passenger side ?

can you attach wall the hole way around these ? 3 walls all up or only 2 ?

It's only the front and middle sections on the Foxwing 180 that can be walled off with the Foxwing Awning Tapered Zip Extension.
Unfortunately the rear section has a slightly shorter width, so is not compatible with the optional wall attachments.
Are the poles attached to the awning or is it separate like the Foxing 270

The Foxwing 180 has a very similar design to the Foxwing 270. The upright adjustable height poles are separate to the awning and are slotted in place in the same way as the 270 version.

I know you’ve mentioned previously the length of the sides being 270cm, the RV4 and RV5 can be attached to the front and middle sections using the zippered awning connector. My question is can we still attach the RV3 to any of the sides, with it being only 240cm? Obviously it wouldn’t fit the full length but can it still be attached?

Yes, you can attach an RV3 to the Foxwing 180 awning, however, you would only be able to attach it to the front or middle edge. You'll also need to grab an awning connector to connect the tent to the awning edge.
Apart from price, what is the difference between this awning and the dache 180? What would be the easiest setup and stronger of the two

The two awnings have a fairly similar design, with a few minor differences to the frame and set up method. The Darche awning has an extra arm as it swings out forwards and backwards from the mounted backing plate. The Foxwing swings backwards from the mounted backing plate, so the backing plate acts as one of the arms. The Foxwing is slightly heavier as they use solid aluminium, rather than aluminium box tube used in the Darche. Overall they're both quite easy to set up, with the Oztent being a slightly stronger set up overall.
Is there a setup video anywhere for this product?

At this stage we don't have a video for the 180 awning, however we do have one for the 270 awning, so you can get a fairly good feel for the set up. Oztent doesn't have an official video, but there appears to be a few people who have done set-up/review videos on youtube though.
What is the max height the poles can be extended to? I want to attach the awning to the side of my caravan

I've had a chat to Oztent and the poles will extend to 2.2m high.
Want to replace the roll out awning that has been hail damaged, with a unit like this.

We can't see why not, as long as you have a safe and secure way of attaching it to the caravan it should work fine.
If mounted to a dual cab roof rack, will the back end of the awning clear a half canopy on the tray or will there be obstruction?

The packed length of the awning is around 2.5m so it will depend on how to attach it to your dual cab. You might find that your half canopy obstructs the awning from fully opening if it sticks out a little wider than the cab, so it would be worth having a look at where the outside edge of your roof rack sits in comparison to the canopy.

The Foxwing is supplied with brackets that are designed to suit most roof racks, but platforms can be a little tricky depending on the spacing of the rails on the platform. Lots of the stock images from Oztent show the awning mounted to a platform, so if the supplied brackets don't suit, your local roof rack specialist will be able to help you with some brackets that will.
Would rv4 attach to any of the sides and if so, by zipper or sail track connector?

Can an patent rv5 or related tagalong tent be connected to the outer edges of this (ideally not just the read car door end)?

Can these be used with a hatch style tailgate that comes up higher than the level of the roof such as a Nissan x trail?
There are always variables around this, Brad, such as exactly where and how the awning is mounted to your roof, but 180-degree awning usually isn't a problem with lift up rear doors. You just need to make sure the awning is mounted such that the tailgate will clear the side of the awning, and that you have somewhere to run the strap from the rear of the awning to your vehicle
The 270-degree awnings can be a hassle however with the door hitting the frame at the rear.
