Are there any storage pockets internally?

Yes, there are. In the second image you can see them on either side on the rear door inside the tent. If you check out the features video you should also be able to catch a look at the inside aswell.

Are we seeing everything that comes in the pack? Does it have a waterproof fly to go over the top?

The images show the tent as it is supplied. There isn't a separate fly or the tent, but the fabric is waterproof and has a 2000mm waterhead rating.
Will this fit 2x OZtrail Easy Fold Single Stretchers with a Zempire Monstamat Single Camp Mat on each? If not can you recommend a quick pop-up tent for short getaways that will?

Unfortunately, you won't be able to fit standard height stretchers in the Easy Up 4 Pop Up Tent. The design of the pop-up style tents means that they're not really suited to stretchers, as the curved design makes them nearly impossible to get in, and if you did, you'd be uncomfortably close to the roof. We'd recommend sticking with the Monstamats directly on the tent floor. If you're wanting a tent option to suit stretchers, then we'd recommend looking at the Instant Up style tents, as they have enough head space to be able to fit stretchers comfortably.
Which groundsheet would you recommend for the Easy Up 4 Pop Up Tent?

There isn't going to be an exact fit for the Easy Up 4 Pop Up Tent due to the shape configuration, but we'd recommend the Ultramesh Tarp in the 3.05m x 3.05m size. This will give you space around the tent to pop shoes etc on.
