Strictly from a pole perspective, composite poles are generally known to be one of the best swag pole options out there. Historically multiple brands have used composite poles, and often they outlast the swag themselves. The steel poles on the 23Zero swags have recently been improved and re-worked, so they are still an excellent option if you're leaning more toward that swag for other reasons.

I'd say any self-inflating mattress of up to 10cm should still be able to roll up inside your swag and still fit in the swag bag.
The best bet would be to choose one that fills as much of the swag space as possible so you don't have big gaps of floor. The only consideration with the 1100 wide swag is in the King Single mattress option you're unlikely to find anything bigger than around 90cm, and the double options are far too wide, around 130cm.
The only bang-on size option would be the Darche All Terrain 1100, but that has mixed reviews on performance and comfort, so I would recommend trying one out before you commit if possible.

Does it fit on the Darche 100 xl stretcher? Currently have the 900 swag on the 100 xl stretcher but hoping the 1100 will make things less claustrophobic. Is there a larger stretcher?Thanks

The Darche XL100 stretcher is suitable for use with either 900 or 1100 swags, and is a very common combination. Generally, if you're finding your swag abit claustrophic, the segmented swags, or 3 hooped swags can be a great option. The central hoop keeps the canvas lifted and open, creating more space. If you have a standard hoop-ended swag in the 900 size, the 1100 version can often feel more stuffy, as the fabric hangs in through the middle abit more. Hope that helps.

Officially, yes, the dimensions are correct, however, due to the canvas, seaming and curve of the fabric, the useable internal sleeping space is a few centimetres smaller in each dimension.

There will be some minor overhang on either side, but that won't affect the function of comfortability at all. It's one of the widest stretchers on the market, so one of the best choices for use with an 1100 wide swag.
