You could, Brad, I wouldn't suggest using it for any hike longer than 1-2 days though.
A travel pack is boxy, they sit low and the weight when packed full tends to sit a long way out form your normal centre of gravity, so they are more laborious to carry. They also tend to weigh a fair bit before you have even started loading it up.
The harness on a travel pack is usually a secondary consideration too, so while it can carry heavy loads it won't do so as comfortably as a dedicated hiking pack with a better harness and geometry that will keep your centre of gravity as normal as possible.

The Cedar Breaks has just a few differences compared to the Cuba, which include hydration compatibility for a bladder, a Micro gel harness with gel panels in the shoulder straps for slightly more comfort compared to the simpler harness on the Cuba, a 25L daypack compared to a 20L day pack, and is also lighter in weight overall. I've just double checked this for you. The Black Wolf Cuba 65L Travel Pack only has the one main rain cover that is attached to the main bag. There isn't a second, smaller rain protector for the day pack only.

I've just checked this with our Travel expert Neville. He informed me that the Black Wolf Cuba 65L Travel Pack does indeed have a cover for the harness straps. The cover just tucks into a pocket at the bottom of the bag when it's not in use.

I've just checked this on the bag we've got on display in our shop and can confirm that there is a mesh drink bottle slot on the daypack of the Black Wolf Cuba 65L Travel Pack. There isn't one on the larger part of the bag though.
How many litres is the day pack?

Does it have just the shoulder straps? Is there a sternum and hip strap?
