G'day Erika,
No, it doesn't, as the supporting bars are a fixed length suitable for a 4-foot table. It may be possible for you to do a DIY modification on these, but it's not something we've tried before, so I cant guarantee it would work.

Could I fit two singles next to each other? I know there is a double available, but could it be advantageous to have two singles instead?

We've not physically tried this out, but we can't think of any reason this wouldn't work. One set of attachment poles could be used to attach both cupboards, you just won't be able to secure both cupboards to the side legs with the velcro straps, unless the cupboard doors are positioned to face out on opposite sides.
