Yes, the domed shape will help water to run down off the sides of the shelter. The guy ropes will also help to tension the fabric and reduce water pooling near the poles.
Planning on using a projector for camping movies and wondered if the walls are white enough to run a projector

I'm not 100% sure how to answer this one, as projectors generally work on any light coloured surface.
Are you talking about the physical colour in terms of the hue, or the density of the fabric, etc?
You can absolutely run a projector on them no worries though, sounds like you've got a luxury set up planned!
I want to know if it easy enough to be setup by 1 person as I often camp by myself.

The set up is relatively simple, and not too different from a dome style tent. It is possible for one person to set it up, however, it could be a little tricky to try and hold everything in place while setting it up.
Looking for a shelter to cope with a bit of rain and coastal winds

Both of these Outdoor Connection shelters are similar, however, the Coolum uses a slightly heavier duty fabric and has a slightly smaller overall footprint. They both have the same waterproof rating, and in terms of wind they both have plenty of guy ropes to secure them, but the Cooum has a slightly better design for windy conditions.
How does this compare to the Coleman event 14 deluxe for ease of setup and waterproofness?

The Event 14 Deluxe and Breakaway 450 Sun Shelter have a fairly similar shape and size, however aside from this they are quite different. The Breakaway 450 uses fibreglass poles (similar to a dome style tent), that need to be connected and fed through the pole sheaths on the shelter body. The fabric used has a 2000mm waterhead rating so it is suitable in rain, and has a UPF 50 rating, so will keep you protected from UV. The pole design means that this shelter will take a little longer to set up, but it packs down much smaller and lighter than the Event 14 Deluxe. The Event 14 Deluxe has a steel frame, which is a little quicker to set up, but also bulkier and heavier. The fabric used has a UPF 50 rating as well, however it has a very very waterhead rating of 450mm, and is really only designed to handle an accidental shower, it isn't designed to be used in wet weather. Overall, if you're looking for a shelter to handle wet weather then the Breakaway 450 would be the best option.

The Breakaway 450 Sun Shelter is relatively easy to set up. It has fibreglass style tent poles that are similar to a dome tent, so if you've set one of those up before you should be fine.
Is this gazebo waterproof / rainproof?

Outdoor Connection claim that the shelter has a 2000mm waterproof rating plus the seams are sealed. To understand the waterproof rating, have a read of our Blog Understanding Tent Waterhead Ratings. So yes, this shelter should be waterproof in light rain however in heavy to torrential downpours it might be a different story.
