Can the pad straps be removed so you can add your own?

Yep, the mattress straps are attached by a secure press stud, so as long as the straps you want to use are compatible with this connection, you should be fine.

In the description of the Eb3 it states a sewn in footbox but in an answer to a question it says it folds completely open. Can you please confirm which is correct for the current available model. Thanks

I've just checked out our Ember 3 on display & it has a sewn foot box up to around 50cm from the bottom foot seam.

Would this quilt fit over the Exped Downmat HL MW pad (183x62x9)?

They've been designed to fit over the narrower tapered style mats, that are around 55cm at their widest point. The straps are adjustable in length, so you could probably make it work, but it's hard to give it a try as we don't have that particular mat to try it with.

In BikeHikeSafari they mention to look for the newer bag with 850 down weight, not 750. So presumably this is the older model?

Yes, I can confirm our stock is the newest model with the 850 loft down. The loft is different from the weight, there is 500g of RDS 850 Loft Premium Goose ULTRA-DRY Down™ in this model.
Hi is the Compression bag waterproof

The compression sack for the Ember Eb3 quilt is made from PU Coated Nylon, it's not waterproof, but its material is water resistant.
It says 2 can be joined together but how does this work with the foot box?

AS the Ember Eb3 has a sewn in footbox you'll only connect the top sections using the press studs on the sides of the quilt. Each person will have their own footbox to keep your feet toasty warm.
No possibility to stick a leg out if it gets too warm?

That's right, the sewn-in foot box isn't able to be opened up, this helps to retain heat and reduce weight and bulk. The foot box has been designed to slip over a tapered mat, or if used on top a mat, the recommendation is that you'd keep your feet in the foot box, and up the lower snap connectors that are about knee height to all extra ventilation if needed.
There are no shops that stock this item in my state, can I return it once I've opened it out and attached it to my mat?

Paired with the STS Ultralight Insulated; would the EB3 be the most suitable for Aussie winter/early spring/late autumn? Or would the EB2 be more appropriate?

The EB3 paired with an Ultralight Insulated Sleeping Mat should keep you warm and toasty in most Australian Winter conditions. You could for the EB2, however, you might find yourself cold if you're regularly camped out in winter. I'd personally go for the EB3 as you can always stick your feet out to cool yourself down if you're a little too warm.
Will it work with a rectangular pad?

I've given the experts at Sea to Summit a buzz and double-checked for you. The Ember Quilts are really designed to pair with the tapered style mats. You can use them on a rectangular pad but the bag will just sit on top of the mat, rather than with the mat tucked into it.
Have you had any feed back about the fabric durability yet - especially with wrapping around the bottom of the mat? This was asked earlier in the year but it was too early for feedback.

At this stage, I've only got anecdotal feedback to go on as we don't have any written reports, or reviews online. I've spoken to maybe one or two customers and so far the reports are good and that the new lighter weight fabric doesn't have durability issues.
Are all the baffles box baffles - or are the bottom ones ‘sewed through’?

I will upgrade my old thermarest for a newer lighter model but undecided about which one.

The Ember EB3 Quilt should be ok for the Overland Track in spring or autumn. We'd recommend pairing it with a well-insulated mat, the Sea to Summit insulated airsprung mat range are great. The Ether Light XT Insulated and Comfort Light Insulated mats popular options.
When the quilt wraps around your mat it's in direct contact with your ground sheet or tent floor, and therefore baring the brunt of any abrasion. Obviously this is quite different to the most common sleeping bag set up. I assume sleeping mats are designed with this in mind, but what about the Ember? Has this been accounted for in its design and is there any long term disadvantage to using it like this?

This is a brand new model Ember Eb3 Quilt so it's hard to give advice based on experience as we've not actually seen these in the flesh yet. We haven't heard any issues with the previous models, so we'd dare say there shouldn't be any issues unless there is something abrasive in the tent. My best suggestion would be to make sure you keep the tent clear of sand or dirt which cause abrasion.
Is there a drawcord or similar at the top of the quilt so it can be pulled close in to the neck to prevent draughts in cold weather?
